Jamie Merwin, owner of Sabor, a new Cuban restaurant

How did you get into the restaurant business?

“My wife and I lived in New Jersey and I moved down here to South Florida. She was pregnant in 2007 and my traveling became too much. I started to run her mother’s restaurant in Delray Beach, Phyllis G’s Enigma.”

Why did you open a Cuban restaurant?

My wife, Yaneisi, is Cuban. She was born and raised there. That is why the restaurant is Cuban Continental. She is the Cuban, I’m the continental.”

Why was Boynton Beach a good choice for Sabor?

There is no Cuban restaurant in the Boynton city limits. For business reasons, it was a no-brainer.

What are your hours of operation for Sabor?

“We are open Tuesday through Sunday, 4 to 9 p.m. But we won’t say no to anyone. If someone is here past 9, say around 10 p.m., we will keep it open.”

Are there any special nights planned at Sabor?

“On Friday night, we have Salsa dancing from 10 p.m. to 2 a.m. Our bar can hold 60, 70 people and can hold 100 standing.”

What are your most popular items on the menu?

“Of course it is the Cuban items, cause we are the only Cuban restaurant around. The Churrasco steak and roasted pork are really popular. We can’t keep them on the shelves long enough.”
