2 cups low-sodium beef broth
1 tablespoon butter
1 teaspoon arrowroot powder or cornstarch, dissolved in 3 tablespoons water
1/8 teaspoon sherry or balsamic vinegar, optional
Simmer the beef broth and butter in a saucepan over medium-low heat until it is reduced by half. Add arrowroot mixture, stirring slowly. Simmer and reduce slightly again, until mixture is smooth and rich. If too thick – this should not be gravy consistency – add vinegar and stir.
Makes about 1 cup.
