AC Valhalla Asgard Mysteries won't be obtainable until you defeat the Wolf during Addition to the Family. Once you've beaten that quest, you'll be able to unlock all the mysteries.

AC Valhalla Asgard Mysteries: How to Get Every Mystery
Njord's Lament
This one is fairly simple. Take a boat to the northern island and find Njord the drunkard. Just bring him back to the main island, it doesn't matter where.
Milk of Humankind
Free a god cow by destroying the wooden walls. Move the platform to get the last wall and follow the cow to complete the mystery.
Offering Altar
Find and return all 30 of Ymir's Tear Stones.
Food of the Gods
Start this by looking for a hunter, east of Ivaldi's Forge. Follow him to hunt an Alpha Wild Boar, and you'll complete the mystery.
Valhalla Bound
Talk to a guard east of Ivaldi's Forge.
Hel's Well
Find and battle Motul east of Urangard Chasm.
Flyting Thor
Thor will challenge you to flyting south of Ivaldi's Forge. Spit these bars to best him.
- O’ beware what you ask for, I’ll finish the fight;
- I’m as wise as an owl, you’re a fool of a god.
- Well, your victory’s not what my visions portend.
Noble Harts
Find and follow the dear at the center of Asgard.
Cairn
Stack the cairn at the southeast of Urangard Chasm.
